The Fish Lady Recipe: Episode 4 – Beer Battered Fish and Chips
Beer Battered Fish and Chips (6 servings)
Ingredients:
- 2 fish (filleted)
- 4 potatoes
- 1 ½ cups flour + 1 cup flour
- ½ tsp baking powder
- ½ tsp garlic powder
- 1 tsp salt
- ½ tsp pepper
- 12 oz beer
- Few drops of malt vinegar
In medium bowl combine 1 ½ cups flour, baking powder, garlic powder, salt, pepper, beer and 3-6 drops of malt vinegar. Let sit at room temperature for 30 minutes to 2 hours.
Heat oil in deep fryer or dutch oven to 375F.
Cut potatoes into thick French fries or wedges. Fry for 10 minutes. Drain on paper towels or a rack on a baking sheet. Salt generously while hot. Keep warm (250F) in oven until ready to serve.
Rinse and pat dry fish fillets. In a small bowl add 1 cup flour. Dip the fish fillets in the flour, then the batter, then the flour again. Fry 4-5 minutes. Drain on paper towels or a rack on a baking sheet. Lightly salt while warm. Serve with malt vinegar.
