The Fish Lady Recipe: Episode 7 – Catfish Po Boy with Cole Slaw
Ingredients:
- 4-6 catfish fillets
- 3 tbsp vegetable or canola oil for frying
- ¾ cup cornmeal
- ½ cup flour
- 1 tsp Old Bay Seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp pepper
- 1 cup milk
- 1 egg
- ½ tsp hot sauce (to taste)
- Sub rolls
- Cole slaw (recipe follows)
Directions
In medium bowl or dish mix together cornmeal, flour, Old Bay Seasoning, onion powder, garlic powder, salt and pepper.
In another medium bowl or dish mix together milk, egg and hot sauce.
Dip the catfish fillets in the milk mixture, then in the cornmeal mixture. Shake off excess and set aside.
Heat oil on medium-high heat. Fry the catfish fillets 3-4 minutes, flip and then fry for 2-3 minutes or until golden brown. Sprinkle with salt while hot.
Serve on sub rolls topped with your favorite cole slaw (See Recipe Below).
Cole Slaw Ingredients:
Slaw:
1 bag cole slaw mix
1 cup shredded carrots
½ white onion, chopped into small pieces
Salt & pepper (to taste, about ¼-½ tsp each)
¼ cup white wine vinegar
Dressing:
½ tsp salt
½ tsp pepper
¼ tsp sugar
¾ cup vegetable oil
Mix together in a large bowl the cole slaw mix, carrots and onions. Sprinkle with salt and pepper. In a measuring cup whisk together the vinegar, salt, pepper, and sugar. Slowly add the vegetable oil while whisking. Pour the dressing over the cole slaw and thoroughly mix it together. Cover and refrigerate for at least 2 hours, overnight is better.
