The Fish Lady Recipe: Episode 6-Southern Seafood Gumbo
Southern Seafood Gumbo
1 tbsp olive oil
1 onion, chopped
2 celery stalks, chopped
½ green bell pepper, chopped
2 garlic cloves, minced
46 oz V8 juice (use Spicy Hot V8 for extra heat)
1 can (14.5 oz) diced tomatoes
¼ tsp cayenne pepper
16 oz frozen okra, sliced and thawed
1 lb catfish fillets, cut into ¾ inch cubes
¾ lb uncooked shrimp, peeled and deveined
Salt & pepper
3 cups cooked rice
In large saucepan sauté onion, celery, bell pepper and garlic in olive oil until tender, about 5 minutes. Add V8 juice, tomatoes and cayenne pepper. Stir and bring to a boil. Reduce heat, cover and simmer for 10 minutes, stirring occasionally.
Add okra and catfish. Stir and simmer for 5 minutes.
Add shrimp, ½ tsp salt and ¼ tsp pepper. Simmer for 3 minutes.
Serve topped with cooked rice.
